Who are we?

Nicolas, after some studies in fruit growing and wine growing (fermentation control) decided to acquire other techniques of wine making. This is the main reason why he traveled abroad in order to work on the vines. Australia, South Africa, and the United States are inside its log book...

In 2001, Nicolas spent 6 months in Australia, Clare Valley, county of Adelaide. He took part in the harvest and the wine making of the Shiraz.

Afterwards, he went to the USA, Monterey (CA) and worked for Kendall Jackson, the second biggest wine-producer group ( in bulk) of the USA. The Kendall Jackson cellar is a well known name for the quality of its outstanding white wines such as the Chardonnay.

May 2002: a new destination is chosen: South Africa, Stellenbosch, near Capetown, in order to discover the Boschendal estate. This cellar has been producing wine for the last three centuries and did become the standard in terms of quality of its wines on that continent.

Thanks to his different experiences abroad, Nicolas got back home with an outstanding knowledge and know-how in wine making. He is now carrying out his knowledge of wines at la Cave Chevalier.
