The working process
In order to produce the best wine, we put all the assets on our side with a unique goal: get the exceptional, every single year.
Our harvest is hand made, without any mechanization. You will be able to taste our unique vintages (white and red) in a few months.
With the most advanced technologies in terms of:
- Oxygenation
- Pneumatic pressing
- Pump ASPIC 2
- Control of the wavelength of the light in the cellar
- Subdivided wine making
Filtration of the water on active carbon (cleaning phases, maintenance …).
The ageing of wines will take place in brand new barrels (French oak from Allier).
2009 Harvest
Exceptional weather conditions can qualify the 2009 harvest. 100% hand made, all the different grapes are put into medium-sized boxes (so that grapes will not be damaged), and then brought to the cellar where the pressing takes place.
Then the magic takes effect...
As for the red wine, the process is different as the grapes have other needs.
